Oatmeal Cake Recipe

I won’t lie, I’m intrigued by this particular recipe. So intrigued, in fact, that I’ll be making it this weekend. Another thank you to the Baldwin Congregational Church and their 2005 UCC Coffee Hour Cookbook.


What you’ll need:

1 1/4 Cups Boiling Water

1 Cup Oatmeal

1 Stick Butter or Margarine

1 Cup White Sugar

1 Cup Brown Sugar

2 Eggs

1 1/2 Cups Flour

1 Teaspoon Soda

1 Teaspoon Cinnamon

1/2 Teaspoon Nutmeg

1/2 Cup Chopped Nuts, Dates, or Raisins (if desired)



Pour boiling water over oatmeal. Let stand 20 minutes. Cream butter, white sugar, brown sugar, and eggs. Combine creamed mixture and oats. Beat well. Sift and add flour, soda, cinnamon, nutmeg, nuts and dates or raisins. Bake at 350 degrees F in a 13 x 9-inch greased pan for 40 minutes.
