This is a recipe from the 2005 Baldwin Congregational Church UCC Hour Cookbook
What you’ll need:
1 Pound dates, pitted and cut up
1 Cup boiling water
1 Teaspoon soda
1 Cup sugar
1 Tablespoon butter
1 Teaspoon vanilla
1 1/2 Cup flour
1 Cup chopped nuts
1/2 Teaspoon salt
Add boiling water to dates and soda. Cool. Mix sugar, egg, butter, and vanilla together and stir into the date mixture. Add flour and salt all at once. Stir. Nutmeats are optional. Bake at 325 degrees about 40 minutes in 13 x 9 inch well oiled and floured pan.
Double the recipe for large sheet pan. Can be baked as date bread in small pans, but should be lined with wax paper after oiling pans. Extra dates and nuts can be added for special holiday cakes.
