Banana Breakfast Bars

Hello, friends! It’s time for another family recipe from the Baldwin Congregational Church, located in Baldwin, Michigan! Are you as excited as I am?


I confess I’m not a huge fan of bananas, but some things simply sound scrumptious. On that note, here we go!

What you’ll need:

3/4 cup soft butter or margarine

1 cup packed brown sugar

1 egg

1/2 teaspoon salt

1/2 teaspoon cinnamon

1 1/2 cups mashed, ripe bananas

4 cups uncooked regular or quick oats

1/2 cup dried currants, raisins, prunes, or apricots, chopped

1/2 cup chopped nuts

1/2 cup sunflower seeds

Directions: Beat egg, salt, cinnamon, and bananas. Stir in remaining ingredients. Bake at 350 degrees for 45-55 minutes. Cut after cool and put in plastic bags. Freeze.
